Eggplant and Courgette Towers

Who said that Vegetarians cant have fun cooking Eggplant and Courgette on a Weber.

Ingredients
    INGREDIENTS:
  • 1 Courgette OR Zucchini
  • Eggplant
  • Olive Oil
  • 250 g Mozzarella Cheese ((Grated))
  • 1 Rosemary Sprig
  • Salt & Pepper ((For Taste))
Instructions
    METHOD:
  1. 1. Rinse the courgette and Eggplant and cut into 1½ cm slices. Brush each slice with Olive Oil. Cut the Mozzarella into 1 cm slices.
  2. 2. Rinse and chop the Rosemary finely.
  3. 3. Prepare the Weber for direct heat about 180 degrees.
  4. 4. Grill the Courgette and Eggplant slices for 3 min on each side so they get grill marks. Remove the slices from the barbecue.
  5. 5. Layer the grilled slices of Courgette and Eggplant with the Mozzarella: 1 slice of Eggplant, 1 slice Mozzarella, 1 slice Courgette, 1 slice Mozzarella and finish off with 1 slice Eggplant.
  6. 6. Place the vegetable basket containing the small ‘towers’ on the grate and grill for about 3-4 min. until the Mozzarella Cheese is melted. Sprinkle with Fresh Rosemary and season with Salt & Pepper before serving.
