  • 4 kg Beef Fillet

    CUTTING METHOD
  1. 1. Firstly you have to cut of the sides of the fillet and put it separate since you can use it, its called off cuts.
  2. 2. Then place your fillet on a cutting board and use a sharp knife to start your proccess.
  3. 3.Use the tip of the knife to go between the meat and Tendon and make a small cut to be able to lift the Tendon off the meat.
  4. 4. Hold the tip of the Tendon and then angle your knife so you can separate the Tendon from your fillet.
  5. 5. Separate the Tendon from the meat by pulling on the tendon and at the same time pressing down with the knife on the fillet.
  6. 6. Keep on doing that until the whole Tendon is separated from the Fillet.
  7. DIFFRENT MEAT CUTS
  8. - You can cut your fillet into diffrent cuts. - However make sure when you cut you cut against the grain and not with the grain. - You can cut your Fillet into 200g steaks. - Also use the off cuts do cut into cubes or strips for a stir fry or stew. - You can butterfly your Beef fillet also. - Use the off cuts for strips (Stroghanoff)
