One-Pot Vegan Sriracha Chili

Ingredients
    INGREDIENTS:
  • 1 tbsp Olive Oil
  • 1 Yellow Onion ((Diced))
  • 4 Clove Garlic ((Crushed))
  • 1 Red Pepper ((Diced))
  • 1 1/2 tbsp Chili Powder
  • 1 tbsp Cumin
  • 3/4 cup Sriracha
  • 700 g Black Beans ((1 Can))
  • 700 g White Beans ((1 Can))
  • 700 g Kidney Beans ((1 Can))
  • 700 g Diced Tomatoes ((1 Can))
  • 1 cup Frozen Corn
  • 1 cup Water
Instructions
    METHOD:
  1. 1. Start by peeling and mincing your Garlic and dicing your Onion and Red Pepper.
  2. 2. With your soup pot over medium heat sauté the Onion with Olive oil. Once translucent add peppers and garlic and Sauté for an additional minute or so before proceeding to next step.
  3. 3. Add Chili Powder, Cumin and Sriracha and let cook for a few minutes.
  4. 4. Add remaining ingredients and let simmer on medium heat for 20 minutes stirring occasionally.
  5. 5. Enjoy in any way you desire.
