Instructions
MARINADE METHOD:
1 Rack of Springbok, deboned, trimmed and marinated in a basic marinade for 1 - 2 days. (marinade your choice).see recipe tips.
METHOD:
1. Melt the butter in a frying pan and saute the Onions until transparent.
2. Add Celery, Apricots and Walnuts and cook over high heat, stirring continuosly. Place onto a bowl and allow to cool.
3. Stir in the Parsley and Bread crumbs. Mix well and season to taste.
4. Flatten the Springbok and place the filling in the center, Roll tightly and secure with string.
5. Roast the springbok at 190 degrees until browned or cooked to your liking for about 60 - 90 minutes.
6. Serve with Potato Bake and Root Vegetables.

TIPS: YOU CAN USE RED WINE AND COKE FOR YOUR MARINADING OF THE RACK, YOU CAN ALSO USE SOME SOAY SAUCE AND MEAT TENDERISER TO ENSURE THAT YOUR SPRINGBOK WILL BE SOFT AND TENDER WHEN DONE COOKING.
