Tomato and Olive Sauce

Olive and Tomato Sauce is amazing for light meals.

Ingredients
  • 1 kg Large Ripe Tomatoes
  • 1 tbsp Olive Oil
  • 2 Cloves Garlic ((Peeled & Crushed))
  • 1 Medium Onion ((Peeled & Finely Chopped))
  • 1/2 cup Pitted Black Olives
  • 2 tsp Red Wine Vinegar
  • Salt & Pepper ((For Taste))
Instructions
    METHOD:
  1. * MARK THE TOMATOES WITH A CROSS ONTOP OF EACH TOMATO.
  2. 1. Place tmatoes in boiling water for about 1 - 2 minutes and then after pluge into cold water.
  3. 2. Peeel the skin from the top of the tomato and discard of the peels.
  4. 3. Chop Tomatoes in chunky cubes.
  5. 4. Heat your oil in a heavy based pan and fry your Onions and garlic for about 5 minutes, constently stirring.
  6. 5. Add Tomatoes to pan and cook for about 2 - 3 Minutes, Allow to cool slightly.
  7. 6. Add Black Olives, Sugar, Vinegar and Salt & Pepper stir until Combined.

TIPS: THIS SAUCE CAN BE MADE A DAY BEFORE AND STORED IN A SEELED CONTAINER IN THE FRIDGE IF YOU PREFER YOU CAN PUREE MIXTURE TO A SMOOTH CONSISTANCY.
