Baked Trout

Have a stuffed Trout wrapped in Bacon for a light summer meal.

Ingredients
    INGREDIENTS:
  • 30 g Butter OR Margarine
  • 1 Onion ((Chopped))
  • 1 Celery ((Diced))
  • 2 Slices Fresh Bread ((Cut into 1cm Cubes))
  • 1 tbsp Fresh Thyme OR Dried Thyme ((Prever Fresh))
  • Salt & Pepper ((For Taste))
  • 4 Fresh Trout ((Cleaned) (225g each))
  • 8 Rashers Bacon
  • Parsley Leaves ((For Garnish))
Instructions
    METHOD:
  1. 1. Preheat oven on 230 degrees of Gas Stove 8.
  2. 2. Melt the Butter in a frying pan adding the Onion and Celery cook until softened for about 5 minutes. Remove the pan from the heat add the Bread Cubes and Thyme and season with Salt & Pepper to taste. Stir to mix well.
  3. 3. season the Cavity of each Trout with Salt & Pepper.
  4. 4. Stuff each Trout with the Bread mixture dividing it evenly between the fish. If necessary secure the openings with wooden cocktail sticks.
  5. 5. Wrap 2 bacon rashers around each stuffed Trout. Arrange in a baking dish in one layer.
  6. 6. bake until the fish flakes easily when tested with a fork and bacon is crisp, 35 - 40 minutes. Serve and Garnish with Thyme leaves and lemon on the side.
