Baked Vegan Mac and Cheese

Ingredients
    INGREDIENTS:
  • 450 g Macaroni
  • 2 Coconut Milk ((2 Cans))
  • 1 cup Nutritional Yeast
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper
  • 3/4 tsp Paprika
  • 1/4 tsp Ground Mustard Seed Powder
  • 1 cup Vegan Cheddar Cheese
  • 1 cup Breadcrumbs
  • 1/3 cup Vegan Butter ((Melted))
Instructions
    METHOD:
  1. 1. Preheat oven to 210 degrees.
  2. 2. Cook the Macaroni as instructed on the box. Strain.
  3. 3. While the pasta is cooking add the Coconut Milk to a medium-sized saucepan. Whisk in the Flour, Nutritional Yeast, Garlic Powder, Onion Powder, Salt, Pepper, Paprika and Mustard Powder.
  4. 4. Bring to a simmer on medium heat. Turn the heat off and mix in the shredded Vegan Cheese until melted.
  5. 5. In a casserole dish mix together the Macaroni and the Cheese sauce.
  6. 6. Mix together the melted Butter and Breadcrumbs. Sprinkle on top of the Mac and Cheese.
  7. 7. Bake for 20 to 25 minutes or until bubbly and golden brown on top.
  8. 8. Let sit for 5 to 10 minutes before serving.
Recipe Notes

TIPS: Make sure the Coconut Milk is full-fat unsweetened in the can. Carton coconut milk will not work for this recipe. Mix the coconut milk and flour together before heating the pot, otherwise it will clump up.
