Banting Lemon Cheesecake

Ingredients
    INGREDIENTS FOR BASE:
  • 3/4 cup Almond Flour
  • 3/4 cup Coconut Flakes
  • 1 pinch Kosher Salt
  • 4 tbsp Butter
  • INGREDIENTS FOR FILLING:
  • 250 ml Fresh Cream
  • 3/4 cup Xylitol
  • 1/4 cup Lemon Juice
  • 1 tbsp Lemon Zest
  • 225 g Full Fat Cream Cheese
  • 2 tbsp Gelatine
  • 1/2 cup Boiling Water
  • Strawberries ((Garnish))
Instructions
    METHOD FOR BASE:
  1. 1. Melt the Butter and combine with all of the above ingredients until well blended.
  2. 2. Spread out into a well buttered pyrex dish to form a base for the Cheesecake.
  3. 3. Place this in the refrigerator while prepping the filling.
  4. METHOD FILLING:
  5. 1. Mix the Gelatine and the boiling water together in a small bowl and set aside to cool.
  6. 2. Combine all ingredients in a mixing bowl and beat until smooth.
  7. 3. Now add the Gelatine mixture and continue beating until the filling is smooth and lump free.
  8. 4. Scoop the mixture onto the base and allow to set in the refrigerator.
  9. 5. Garnish with Strawberries before serving.
