Bean Soup with Sausage

Ingredients
    INGREDIENTS
  • 4 Italian Sausages
  • 2 tsp Olive Oil
  • 2 Medium Leeks ((Sliced))
  • 1 Clove Garlic ((Peeled & Crushed))
  • 1 Large Carrot ((Chopped into small Peaces))
  • 2 l Hot Water
  • 2 Celery Sticks ((Sliced))
  • 2 Beef Stock Cubes
  • 1 tbsp Cake Flour
  • 1/2 cup White Wine
  • 125 g Small Shell Pasta
  • 440 g Three Bean Mix ((1 Can Drained))
  • 1 Chilli ((Finly Chopped))
  • SalT & Pepper ((For Taste))
Instructions
    METHOD:
  1. 1. Cut Sausages into small pieces about 2 cm long.
  2. 2. Heat Oil in large heavy based pan and fry sausages, Cook over medium heat for about 5 minutes or until golden brown.
  3. 3. Remove from pan and drain on paper towel.
  4. 4. Add Leeks, Garlic, Carrots and Celery to pan and cook for 2 - 3 minutes or until soft, stir occasionally.
  5. 5. Add flour and cook for 1 minute stirring constantly, Add Stock Cubes, gradually stir in water and Wine.
  6. 6. Bring to boil and the reduce heat and let simmer uncovered for 10 minutes.
  7. 7. Add Pasta, Beans and Chilli to pan and increase the heat cook for about 8 - 10 minutes or until Pasta is tender, Return sausages to pan and use Salt & Pepper for taste.
  8. 8. Serve with Chopped Parsley.
