1. Saute oil, beef, onion and sweet Pepper over medium/high in a large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
2. Add Garlic and saute 1 more minute.
3. Stir in Tomatoes, Spices, Salt and Pepper. Top with Cabbage. Cover and cook 15-20 minutes or until cabbage is tender.
4. Top with Cheese, cover until melted then serve.
Recipe Notes
TIP: Add 1/4 cup water if the cabbage doesn't seem to be releasing enough liquid.
