METHOD:
- 1. Pre-frozen shredded potatoes (hash brown) may be substituted. Use about 2 cups.
- 2. Preheat oven to 200 degrees. Lightly spray a 33cm x 22cm baking pan.
- 3. Make a pocket in the Chops to hold the filling. Cut the the pocket on the side of the Chop with a sharp knife just so you can fill it.
- 4. Peel the Potatoes if you wish. Slice the Potatoes ULTRA thin you should b able to see through them. Use a mandolin to accomplish this. You may also substitute with Frozen Shredded Potatoes (Hashbrowns) if you don’t want to bother with the thin slicing. Pat the potatoes to remove excess moisture between paper towels.
- 5. Place potatoes in a medium bowl. Add the Cheeses, Salt, Pepper and 1 tbs of the melted Butter.
- 6. Stuff each chop with 1/4 of the Potato-Cheese mixture. Place in prepared pan. Brush with remaining melted Butter. Sprinkle lightly with additional Salt & Pepper.
- 7.Bake at 200 degrees for 40 to 50 minutes. When done serve with a Sald of your choice even cubed fresh Mango.
