Country Pumpkin and Pasta Soup

Ingredients
    INGREDIENTS
  • 1 Large Onion
  • 700 g Pumpkin ((Butternut brings more Flavour))
  • 2 Medium Potatoes
  • 1 tbsp Olive Oil
  • 30 g Butter OR Margarine
  • 2 Clove Garlic ((Peeled & Crushed))
  • 3 l Chicken Stock
  • 125 g Miniature Pasta OR Risoni
  • 1 tbsp Fresh Parsley ((Chopped Finely))
Instructions
    METHOD:
  1. 1. Peel Onion and Chop Finely
  2. 2. Peel Potato and Pumkin and cut into small cubes.
  3. 3. Heat Oil and Butter in large pan, Add Onion and Garlic and cook for 5 minutes on low heat.
  4. 4. Add Pumpkin, Potatoes and Chicken stock and increase the heat, let cook for 8 minutes or until vegetables are tender.
  5. 5. Add Pasta and cook for 5 minutes while stirring until Pasta are tender.
  6. 6. Serve and Garnish with Parsley.

TIPS: BUTTERNUT OR JAPANESE PUMPKIN WILL GIVE A SWEETER TASTE AND FLAVOUR. TINY STAR SHAPE PASTA LOOKS ATTRACTIVE IN THIS SOUP VEGETABLE STOCK CAN BE USED TO MAKE THIS A VEGETERIAN SOUP.
