Countrystyle Oxtail Potjie

This Oxtail Potjie can be done on the fire or even on your stove top.

Ingredients
    INGREDIENTS:
  • 2 kg Oxtail ((Cut into Pieces))
  • 6 Slices Bacon
  • 1/2 cup Cake Flour
  • 4 cup Beef Stock
  • 2 tbsp Tomato Paste
  • 6 Black Pepper Corns
  • 1 Bundle Fresh Herbs ((Rosemary, Basil, Chives, Thyme, Tarragon))
  • 6 Leeks ((Chopped))
  • 2 Onions ((Chopped))
  • 3 Carrots ((Coarsely Chopped))
  • 3 Carrots ((Finely Diced))
  • 20 Button Mushrooms
  • 1 cup Red Wine
  • 1/2 cup Sherry
  • 1/2 cup Cream
  • 2 tbsp Butter OR Magarine
  • 2 tbsp Olive Oil
  • 4 Clove Garlic
  • Salt & Pepper ((For Taste))
Instructions
    METHOD:
  1. 1. Dry the Oxtail pieces with a paper towel.
  2. 2. Put the Flour in a plastic zip-lock bag, add the Oxtail and shake to coat it all over.
  3. 3. Heat the Butter and Olive Oil over medium high heat and sauté the Bacon.
  4. 4. Remove Bacon and set aside.
  5. 5. Brown the Oxtail evenly and set aside.
  6. 6. Add the finely diced Carrots, Leeks and Onions and cook until soft and transparent.
  7. 7. Add the Oxtail, Bacon, Bouquet Garni, Peppercorns, Garlic, Tomato Paste, Red Wine and Sherry.
  8. 8. Bring slowly to a boil and cook on a gentle simmer for 3 hours, covered.
  9. 9. 1 hour before serving, add the remaining Carrots and the Mushrooms.
  10. 10. Season with Salt & Pepper.
  11. 11. Just before serving, add the Cream and stir
  12. 12. If you wish to thicken the sauce, mix some Maizena with the Cream before adding.
  13. 13. Serve with Turmeric Samp.

TIP: BEEF SHANK CAN BE USED INSTEAD OF OXTAIL IF YOU DO NOT HAVE OXTAIL. THIS WAS DONE ON A GAS STOVE SO YOUR TIME OF COOKING ON A FIRE WILL BE ABOUT 30 MINUTES TO AND HOUR LONGER.
