Creamy Tex-Mex Pasta Salad

Healthy as can be a Pasta Salad in a Tex-Mex way.

Ingredients
    INGREDIENTS:
  • 220 g Cooked Screw Noodles
  • 1 Avacado ((Diced))
  • 1 Black Beans ((1 Can))
  • 1/2 cup Corn
  • 1/2 cup Tomatoes ((Diced))
  • 2 Onions ((Finely Chopped))
  • 1/4 cup Cilantro ((Chopped))
Instructions
    METHOD:
  1. 1. Cook Pasta according to package directions drain and rinse with cold water and drain again. Pour into a large pasta bowl Add the Black Beans, Corn, Tomato, Onion and Cilantro to the pasta bowl.
  2. 2. In a small bowl whisk all the ingredients for the Salsa. Pour over the pasta and stir until fully combined. Refrigerate until ready to use.
Recipe Notes

To spice things up: add 1/4 cup of your favorite salsa to the dressing! To make ahead: Make the dressing and cook the pasta up to 1 day in advance. Toss together up to 4 hours before serving.
