Fettuccini with Zucchini

Ingredients
    INGREDIENTS
  • 500 g Tagliattelle OR Fettuccine
  • 60 g Butter or Margarine
  • 2 Clove Garlic ((Peeled & Crushed))
  • 500 g Zucchini (Baby Marrows) ((Grated))
  • 3/4 cup Freshly Grated Parmeson Cheese
  • 1 cup Olive Oil
  • 16 Medium Size Basil Leaves
Instructions
    METHOD:
  1. 1. Cook pasta in a large pan with boiling water until tender, Drain water and return to pan.
  2. 2. Heat Butter in deap heavy base pan on a low heat until butter is foaming.
  3. 3. Add Garlic and cook for 1 minute.
  4. 4. Add Zucchini and cook for 1 - 2 minutes stirring occasionally until soften.
  5. 5. Add Zucchini sauce to pasta and toss well.
  6. 6. To make the Basil Leaves Crisp, Heat the oil in a small pan, Add 2 leaves at a time and cook for 1 minute or until crisp.
  7. 7. Serve in pasta Bowl and Garrnish with crisp Basil Leaves.
