Gluten-Free Parmesan-Crusted Fish

Ingredients
    INGREDIENTS:
  • 2 cup Cauliflower
  • 2 tsp Extra Virgin Olive Oil
  • 3 tbsp Extra Virgin Olive Oil
  • 2 Clove Garlic ((Minced))
  • Salt & Pepper ((For Taste))
  • 2 Cod Fillets OR White Fish
  • 1 Fresh Jalapeno ((Minced))
  • 2 tbsp Parmesan Cheese ((Grated))
  • 2 tbsp Fresh Parsley ((Chopped))
  • 2 Cloves Garlic ((Crushed))
  • Lemon Zest
  • 1 Large Egg ((Lightly Beaten))
Instructions
    METHOD:
  1. 1. Preheat oven to 200 degrees.
  2. 2. Pulse Cauliflower in a food processor until it resembles fine Breadcrumbs transfer to a large bowl. Drizzle 2 teaspoons Olive oil over the cauliflower and stir to coat spread onto a rimmed baking sheet.
  3. 3. Roast Cauliflower stirring every 5 minutes until lightly golden for about 15 to 17 minutes. Spoon into a shallow bowl to cool.
  4. 4. Mix 2 tablespoons Olive Oil and minced Garlic together in a small bowl season with Salt & Pepper. Brush the oil mixture onto Cod Fillets.
  5. 5. Stir roasted Cauliflower, Jalapeno Peppers, Parmigiano-Reggiano Cheese, Parsley, Garlic, 1 tablespoon Olive Oil and Lemon Zest together in a shallow bowl season with Salt & Pepper.
  6. 6. Brush Egg over the top of a Cod Fillet. Press the egg-brushed side into the cauliflower mixture until well coated and arrange in a shallow baking dish repeat with remaining fillets.
  7. 7. Bake in the preheated oven until the fish flakes easily with a fork for about 10 to 15 minutes.
