Grilled White & Green Pizza

A Vegetarian Pizza that will be quick and easy with Pepper and more to give it flavour.

Ingredients
    INGREDIENTS:
  • 2 cup Fresh Basil Leaves
  • 1/4 cup Pine Nuts
  • 1 tbsp Lemon Juice
  • 1 Clove Garlic
  • 3/4 cup Fresh Parmesan Cheese ((Grated))
  • 1 cup Olive Oil
  • 2 tsp Olive Oil
  • 450 g Summer Squash (Petty Pans) ((Cut into Slices))
  • 1/2 cup part-skim Ricotta Cheese
  • 1 Red Jalapeno Chili
Instructions
    METHOD:
  1. Make your easy Pizza Dough as you will find on the website.
  2. 1. Prepare outdoor grill for direct grilling on medium-high.
  3. 2. Place in a food processor Basil, Pine Nuts, Lemon Juice, Garlic, 1/2 cup Parmesan, 1/3 cup Olive Oil, 1 tablespoon Water, and 1/2 teaspoon Salt, Blend until smooth. Transfer to medium bowl and set aside.
  4. 3. In large bowl, toss Squash with remaining 2 teaspoon Olive Oil and 1/4 teaspoon salt until well coated. Grill 6 to 8 minutes or until tender and grill marks appear, turning over once. Transfer to bowl. Reduce grill heat to medium.
  5. 4. Place pieces of dough onto grill. Grill, uncovered, 2 to 4 minutes or until puffy and grill marks appear. Turn over. Working quickly, divide Pesto, Squash, Ricotta, and Chili among pieces of dough. Cover and grill another 2 to 4 minutes or until Cheese melts and bottoms of crusts are browned. With spatula and tongs, transfer pizzas to large platter or cutting board. Sprinkle pizzas with remaining 1/4 cup Parmesan.

TIPS: A GAS GRILL, OVEN, WEBER BBQ OR NORMAL BBQ CAN BE USED FOR A METHOD TO COOK THIS PIZZA.
