1. Cut each Hake Fillet or Steak in the middle with a knife so it forms a pocket.
2. Lay the ham slices on top of a flat plate and sprinkle cheese and chives over it, then roll the ham up and place it inside the fish pocket. secure with toothpick.
3. Dip the stuffed Hake in cake flour and in egg mix and cover all over with the bread crumbs.
4. Add oil to a frying pan enough so that it will cover half of the hake fillet when frying.
5. Place the Gordon Blue Fillets in the pan and fry on a medium heat until each side is Golden Brown. Fry about 12 - 15 minutes turn over frequently. Remove and drain oil on a paper towel.
6. Remove toothpick and serve with potato wedges or salad on the side.
