Instructions
METHOD:

1. For sauce combined the Pineapple, Red Pepper, Red Onion, Lemon Rind and Lemon Juice and Honey in a small bowl. Stir to mix cover with cling film and refrigerate for 30 minutes.

2. Preheat Grill.

3. Bush each Halibut with Butter or Margarine and sprinkle with Salt & pepper, Arrange on the rack in the grill pan buttered side up.

4. Grill the steaks about 8 cm from heat turning once and brushing Butter or Margarine for about 5 minutes on each side. Transfer to warmed serving plates.

5. Stir the chopped Mint into the sauce. Garnish the Halibut with Mint springs and serve with sauce.
