Halibut (Galjoen)with Fruity Sauce

Ingredients
    INGREDIENTS:
  • 4 Halibut Steaks ((700g))
  • 30 g Butter or Margarine ((Melted))
  • Salt & Pepper ((For Taste))
  • Fresh Mint Springs ((For Garnish))
  • INGREDIENTS FOR SAUCE:
  • 70 g Fresh Pineapple ((Finely Chopped))
  • 1 tbsp Red Onion ((Finely Chopped))
  • 2 tbsp Red Pepper ((Diced))
  • 1 Lemon ((Rind Grated Finely))
  • 1 tbsp Lemon Juice
  • 2 tbsp Fresh Mint ((Chopped Fine))
  • 1 tsp Honey
Instructions
    METHOD:
  1. 1. For sauce combined the Pineapple, Red Pepper, Red Onion, Lemon Rind and Lemon Juice and Honey in a small bowl. Stir to mix cover with cling film and refrigerate for 30 minutes.
  2. 2. Preheat Grill.
  3. 3. Bush each Halibut with Butter or Margarine and sprinkle with Salt & pepper, Arrange on the rack in the grill pan buttered side up.
  4. 4. Grill the steaks about 8 cm from heat turning once and brushing Butter or Margarine for about 5 minutes on each side. Transfer to warmed serving plates.
  5. 5. Stir the chopped Mint into the sauce. Garnish the Halibut with Mint springs and serve with sauce.
