Lamb Cutlets on a bed of Mash Potatoes

Lamb Cutlets with a unique Mash Potatoes infused with Turmeric.

Ingredients
    INGREDIENTS:
  • 600 g Potatoes Sliced thinly ((4 Large Potatoes))
  • 2 Medium Tomatoes ((Thinly Sliced))
  • 45 ml Olive Oil
  • Salt & Pepper ((For taste))
  • 1 Large Onion ((Sliced))
  • 2 tbsp Crushed Garlic
  • 4 Lamb Cutlets ((Cleaned and preped))
  • 5 ml Fresh Rosemary ((Chopped))
Instructions
    POTATO METHOD:
  1. 1. Place Potatoes and Tomatoes in a large mixing bowl.
  2. 2. Add 30ml of Olive Oil and seasoning and toss to coat.
  3. 3. Spread half the mixture out evenly in a oven casserole.
  4. 4. Arrange the Onions and Garlic ontop of the Potatoes.
  5. 5. Spread the rest of the Potato mixture over and cover casserole with Tin Foil.
  6. 6. Bake in Pre-Heated oven for about 30 minutes. (200 degrees).
  7. CUTLETS METHOD:
  8. 1. Season the Lamb Cutlets and place them ontop of the baked Potatoes.
  9. 2. Drizzle with Olive Oil and sprinkle the chopped Rosemary over.
  10. 3. Return to the oven and bake uncovered until the Cutlets and potatoes are tender (30minutes)

TIP: ENSURE THAT YOU CUT THE POTATOES IN THIN SLICES OTHERWISE IT WILL NOT BE TENDER FOR THE FIRST BAKING SESSION BEFORE YOU PUT THE LAMB CUTLETS OVER THEM.
