Lasagnette with Spinach and Mushroom Sauce

Ingredients
    INGREDIENTS:
  • 500 g Lasagnette
  • 2 tbsp Olive Oil
  • 60 g Butter
  • 3 Spring Onions ((Chopped))
  • 250 g Baby Mushrooms ((Sliced))
  • 1 Bunch Spinach ((Stem removed and Leaves Shredded))
  • Salt & Pepper ((For Taste))
  • 50 g Grated Cheese ((Your Choice))
Instructions
    METHOD:
  1. 1. Add your Lasagnette to a large pan of boiling water and cook until tender.
  2. 2. Strain water and return to pan.
  3. 3. Heat 2 Tablespoons of Olive Oil and the butter in a large heavy base pan over a medium heat.
  4. 4. Add Spring Onions and sliced Baby Mushrooms and cook for 5 minutes occasionally stirring, Add your shredded Spinach and cook for 2 minutes or until Spinach are tender.
  5. 5. Add Salt & Pepper for taste.
  6. 6. Add Sauce to Pasta and toss until combined.
  7. 7. Serve immediately and garnish with grated cheese of your choice.
