Lemon-Scented Broth with Tortellini

Ingredients
    INGREDIENTS:
  • 1 Lemon
  • 1/2 cup White Wine ((Good Quality))
  • 440 g Chicken Consomme ((1 Can))
  • 1/3 cup Fresh Parsley ((Chopped))
  • Black Pepper ((For Taste))
  • 375 g Fresh OR Dried Veal-OR Chicken Filled Tortellini
  • 2 tbsp Freshly Grated Parmeson
Instructions
    METHOD:
  1. 1. Use a Vegetable peeler to peel wide strips from lemon.
  2. 2. Remove white pith with a small sharp knife and cut 3 of the wide pieces into fine strips.
  3. 3. Place wide Lemon strips, White Wine, Consomme and Water in a large deep pan and cook for 10 minutes over a low heat, remove the Lemon Rind from pan and bring mixtureto boil.
  4. 4. Add 2 Tablespoons of Parsley, Pepper and Tortellini to pan and cook for 6 - 7 minutes or until Pasta is just tender.
  5. 5. Garnish with Chopped Parsley and sprinkle some Grated Parmesan Cheese over.

TIPS: YOU CAN USE CHOPPED BASIL INSTEAD OF PARSLEY DIFFRENT TYPES OF TROTELLINI CAN BE USED FOR THIS RECIPE
