Old School Pumkin Pie

Ingredients
    INGREDIENTS
  • 400 g Ready prepared Shortcrust Pastry and rolled out thinly
  • INGREDIENTS FILLING
  • 3 Extra Large Eggs ((Separated))
  • 250 ml Fresh Cream
  • 200 g White Sugar
  • 5 ml Ground Cinnamon
  • 5 ml Ground Mixed Spice
  • 1 pinch Salt
  • 500 g Cooked Pumpkin ((Mashed & Cooled down))
Instructions
    METHOD:
  1. 1. Line 230mm-diameter pie dis with pastry.
  2. 2. Bake at 200 degrees, 20 minutes or until pastry is golden and cooked through. Set aside.
  3. METHOD FILLING:
  4. 1. Beat Egg Yolk, Cream, Sugar, Spice and salt together. Stir in Pumpkin.
  5. 2. Whisk Egg white till soft peaks form, Fold it into the Pumpkin mixture.
  6. 3. Spoon into Pastry shell.
  7. 4. Bake @ 180 degrees for 45 minutes or until cooked.
  8. 5. to check if its cooked use a skewer and insert it in the centre of the pie and if it comes out clean then its ready.
  9. 6. Serve hot or cold with whipped cream.
