Scallops a la Schaller

A unique way to combine Scallops with Bacon.

Ingredients
    INGREDIENTS:
  • Fresh Parsley ((Finely Chopped))
  • 450 g Bacon ((Cut in halves crosswise))
  • 900 g Small Sea Scallops
  • 1/2 cup Olive Oil
  • 1/2 cup Dry Vermouth
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1/2 tsp Onion Powder
  • Dried Oregano ((Garnish))
  • Crisp Salad Greens ((Garnish))
Instructions
    METHOD:
  1. 1. Snip enough Parsley with a scissors to fill 2 Tablespoons and set aside
  2. 2. Wrap a Bacon piece around every Scallop secure with wooden toothpick. Place all Scallops in a baking dish.
  3. 3. Combine Olive Oil, Vermouth, Parsley, Garlic Powder, Pepper, Onion Powder and Oregano in a small bowl and mix. Pour the Liquid over every Scallop.
  4. 4. Marinade for 4 Hours in refrigerator.
  5. 5. remove wrapped Scallops from marinade, arrange on a boiler pan and boil 10cm from heat for 7 - 10 minutes until Bacon is brown. Turn over and brown the other side for 5 minutes or until Scallops are opaque.
  6. 6. Remove wodden toothpicks and arrange on crisp salad green.
