Simonstown Coast Seafood Potjie

Have this lovely Seafood Potjie in the traditional Cape Way.

Ingredients
    INGREDIENTS:
  • 4 tbsp Olive Oil
  • 1 Fennel ((Chopped))
  • 1 Onions ((Sliced))
  • 1 Clove Garlic ((Chopped))
  • 1 tsp Chili Flakes
  • 2 tbsp Tomato Paste
  • 250 ml White Wine
  • 4 Fresh Tomatoes ((Chopped))
  • Salt & Pepper ((For Taste))
  • 400 g Calamari Tubes and Tenticles
  • 350 g Prawns, ((Deveined))
  • 500 g Mussels
  • 1 Lemon
  • 30 g Fresh Parsley ((Chopped))
Instructions
    METHOD:
  1. 1. Place a potjie pot over hot braai coals then add Olive oil, Fennel and Onion saute until tender.
  2. 2.Add Garlic, Chilli Flakes and Tomato Paste then cook for 2 minutes.
  3. 3. Add the White Wine then bring to the simmer until reduce by half.
  4. 4. Add Tomatoes, season then lay the Seafood on top of the Tomatoes starting with the Calamari followed by the Prawns then finally the Mussels.
  5. 5. Squeeze the juice of a lemon into the pot, season again with Salt & Pepper, then cover tightly with a lid.
  6. 6. Cook on the fire for 15 minutes without stirring.
  7. 7. Uncover the pot, sprinkle on the Parsley then gently stir the potjie.
  8. 8. Serve potjie in deep bowls, with Lemon Wedges and Flatbread.
