Spicy Pork on Tortilla Pancakes

Ingredients
    INGREDIENTS:
  • 1 Clove Garlic ((Peeled & Crushed))
  • 2 tbsp Sunflower Oil
  • 85 ml Lemon Juice
  • 3 tbsp Worcestershire Sauce
  • 575 g Pork Cutlets ((Cut into 1cm Strips))
  • 1/8 tsp Pepper
  • 1 Ripe Avocado
  • 4 tbsp Fresh Coriander Leaves ((Finely Chopped))
  • 8 Corn Tortillas
  • 1 Onion ((Sliced))
  • 1 Green Pepper ((Seeded & Sliced))
  • Black Olives ((For Garnish))
  • INGREDIENTS FOR SALSA:
  • 225 g Sweetcorn ((Drained) 1 Can)
  • 1 Red Pepper ((Seeded & Chopped Finely))
  • 1 Red Onion ((Thinly Sliced))
  • 1 tsp Honey
  • 1 Lime OR Lemon ((Juiced))
Instructions
    METHOD:
  1. 1. In a medium bowl combine the Garlic, 1 Tablespoon of Oil, Lime Juice, Worcestershire Sauce and Pepper. Add Pork Strips and toss to coat. let marinate for 10 - 20 minutes stirring the strips at least once.
  2. 2. Meanwhile, combine all the ingredients for the Salsa in a bowl and mix well. set aside.
  3. 3. Cut Avocado in half and remove the stone. Scrape the flesh into a bowl and mash in with a fork. Stir in the chopped Coriander.
  4. 4. Preheat oven to 180 degrees or Gas Stove 4 wrap the Corn tortillas in foil and heat them on the oven for 10 minutes.
  5. 5. Meanwhile heat the remaining oil in a frying pan.. add the Onion and Green pepper slices and cook until softened for about 5 minutes.
  6. 6. Add Pork Strips to the frying pan and fry briskly turning occasionally until cooked and browned for about 5 minutes.
  7. 7. To serve, Place a spoonful of the Avocado on each of the heated Tortillas. Top with some of the Pork mixture and a spoonful of the Salsa. Garnish with an Olive and serve with more Salsa.
