Instructions
METHOD:

1. Preheat oven to 180 degrees. Line a baking tray with baking paper. Place Schnitzels on the lined tray. Bake and turning once for 20 mins or until golden and heated through.

2. Meanwhile, heat a chargrill on medium. Cook the Corn turning for 10 mins or until tender and charred. Cool slightly. Use a small serrated knife to cut down the side of the cob to release the kernels. Transfer to a bowl.

3. Add Onion, Chilli if using and Sweet Chili Sauce to the corn in a bowl. Stir to combine. Combine the Mayonnaise and Lime Juice in a separate bowl.

4. Cut each schnitzel in half. Place roll bases on serving plates. Spread with Avocado. Top with Schnitzel, Corn mixture and Rocket. Spread roll tops with Vegan Mayonnaise mixture and place on the burgers. Serve immediately.
