Venetian Canapes

Ingredients
    INGREDIENTS:
  • 2 White Bread ((Slices))
  • 5 tbsp Butter or Margarine
  • 2 tbsp Cake Flour
  • 1/2 cup Milk
  • 85 g Button Mushrooms ((Finely Chopped))
  • 6 tbsp Freshly Grated Parmesan Cheese
  • 2 tsp Anchovy Paste
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • Green Pepper ((Cut into Strips))
  • Unpitted Black Olives ((Sliced))
  • Unpitted Green Olives ((Sliced))
Instructions
    METHOD:
  1. 1. Preheat oven to 180 degrees. Cut circles out of bread slices with a 2-inch (5cm) round cutter. Melt 3 Tablespoons of Butter in a small saucepan. Brush both sides of the circles with the melted butter lightly. Bake bread on an ungreased baking sheet for 5 - 6 minutes per side or until golden. remove to wire rack and cool completely.
  2. 2. Increase oven heat to 220 degrees, Melt remaining butter in the same sauce pan. Stir in cake flour and cook on a medium heat until bubbly. Whisk Milk in and cook for 1 minute keep on stirring until sauce is thick. (Like doing a quick White Sauce) Place Mushrooms in a bowl and stir in the sauce, 3 Tablespoons of Cheese, Anchovy Paste, salt and Black Pepper until well blended.
  3. 3. Spread heaped Teaspoon full Mushroom mixture on top of each toasted roundel, Place on a ungreased baking sheet and sprinkle left over cheese over the Canapes.
  4. 4. Bake 5 - 7 minutes until top are lightly brown. Serve warm.
