METHOD:
- 1. Heat Butter and Oil in a large skillet over medium heat until melted and bubbly, Add Chicken and fry for 5 -6 minutes on both sides until Chicken is tender and golden brown. Remove Chicken and place on a cutting board. Top each Chicken breast with 1 slice of Cheese, 3 Capers and 1 Anchovy Fillet.
- 2. Return Chicken to skillet, Sprinkle with Parsley, Cover Skillet and cook over a low heat for 3 minutes or until cheese is semi-melted and juices from chicken runs clear. remove chicken with Spatula and keep warm
- 3. Add garlic and left over sauce in the skillet, cook and stir for about 30 seconds then add your Marsala and stir for 45 seconds so that the flavours work. Scrape up any brown bits in skillet.
- 4. Stir Cream in and cook for 3 minutes while stirring until sauce thickens slightly add Salt & Pepper,
- 5. Place your cooked Penne Pasta on a plate and have your Chicken Breast on the side of it and spoon your sauce over your Chicken Breast and garnish as desired.
