Ingredients
    INGREDIENTS:
  • 2 tbsp Olive Oil
  • 1 cup Onion ((Chopped))
  • 1 cup Red Bell Peppers ((Chopped))
  • 1 tbsp Garlic ((Chopped))
  • 360 g Vegan Sausage ((Chopped))
  • 2 cup Tomato ((Chopped))
  • 1/2 cup White Wine
  • 2 tsp Ground Black Pepper
  • 2 Cans White Kidney Beans
  • 1 Can Red Kidney Beans
  • 2 tsp Fresh Kale
Instructions
    METHOD:
  1. 1. Heat a large oven Casserole over medium-high heat.
  2. 2. Add Olive Oil to pan swirl to coat. Add Onion, Red Bell Pepper And Tomatoes sauté for 4 minutes. Bring to a boil cook until liquid is reduced by half (about 1 minute). Stir in stock.
  3. 3. Combine 2 Cans Cannellini Beans(White Kidney Beans) and 1 can Red Kidney Beans in a medium bowl; mash with a potato masher.
  4. 4. Add bean mixture and remaining beans to pan. Bring to a simmer and cook 5 minutes. Add Fresh Kale cover and simmer 5 minutes. Sprinkle with Oregano.
