1. Whisk together Eggs and Milk. Season with salt and pepper.
2. In a medium heavy base pan over medium heat, melt butter. Pour 1/3 of the egg mixture into the pan, moving to create a thin layer that covers the entire pan.
3. Cook for 2 minutes. Add 1/2 cup Cheddar and cover for 2 minutes more, until the cheese is melted.
4. Add Sausage, Avocado and Tomatoes to the center of egg wrap. Using a spatula, fold both ends over filling so that the melted cheese can add as a glue. Remove from pan.
