METHOD:
- 1. Preheat oven to 150 degrees.
- 2. Toast the Coconut flakes in a baking sheet in the oven for 4 - 5 minutes or until golden brown. Remove from baking tray and cool off.
- 3. Place Cookies in Blender or Food processor and crumble by using on and off method until all is crumbled nicely.

- 5. Beat Cream Cheese with electric mixer until fluffy. Add Eggs and Flour beat on a high speed until smooth. Gradually beating cream and Coconut stirring in 3/4 cup toasted Coconut with wooden spoon.
- 6. Pour mixture over crust and bake for 1 Hour and 10 minutes or until Cheesecake springs back when lightly touched (Center will be soft) Carefully loosen Cheesecake from the edge of pan with spatula, Cool on wire rack and refrigerate until firm. remove side of pan
- 7. Spoon whipped cream into a piping bag and using a star nozzle garnish the sides of the cake and to end it of sprinkle the last roasted Coconut flakes over.
