Gluten-free Fluffy Pancakes

Ingredients
    INGREDIENTS:
  • 1/3 cup Coconut Flour
  • 3 Eggs
  • 2 tbsp Coconut Oil
  • 6 tbsp Plant Based Milk OR Normal Whole Milk
  • 1 1/2 tsp Baking Powder
  • 1 tsp Vanilla Essence
  • 1/4 tsp Salt
  • 2 tsp Brown Sugar
Instructions
    METHOD:
  1. 1. Whisk your Eggs in a stand mixer or by hand for about 5 to 10 minutes until they are light in colour a thicker consistency and foamy.
  2. 2. Then add in the rest of the ingredients and whisk until just combined.
  3. 3. Let the batter stand for 5 to 8 minutes. It should be thick and grainy in texture.
  4. 4. Place some Coconut Oil in a pan and once warm scoop out some batter in to the pan with a tablespoon.
  5. 5. Fry the pancakes on medium heat not too hot otherwise they will burn once both sides are golden brown to medium brown they are ready to be eaten!
  6. 6. Enjoy with Coconut Yoghurt, Maple Syrup and fresh Bananas
