    METHOD GNOCCHI:
  • 1. Cook potatoes in a pan with boiling water for 15 - 20 minutes or until soft.
  • 2. Drain and pash potatoes until soft, Transfer to a bowl.
  • 3. Add Flour, Cheese, Butter, Dalt & Pepper.
  • 4. Use a flat - blade knife to mix untill it becomes a frim dough.
  • 5. Knead on a lightly floured surface until smooth.
  • 6. Roll a heaped teaspoon full of dough into a oval shapes.
  • 7. Indent one side using the back of a fork. Cook in batches in a large pan with rapidly boiling water for 3 - 5 minutes each batch.
  • 8. Gnocchi will float when cooked, Drain and keep warm.
  • METHOD FOR SAUCE:
  • 1. Combine in a pan Tomatoes, Garlic, Wine, Basil, Salt & pepper bring to boil and reduce the heat and let simmer for 15 - 20 minutes or until sauce begins to thicken up.
  • 2. Toss Gnocchi through sauce, Serve in warmed pasta bowl.
  • 3. Sprinkle with Freshly grated Parmesan Cheese.

Notes

TIPS: IF YOU WANT A MEATY SAUCE JUST BROWN 250G OF MINCED VEAL OR BEEF IN 1 TABLESPOON OLIVE OIL BEFOREADDING TOMATO SAUCE INGREDIENTS.
