METHOD:
- 1. In a bowl combine the Mango, Jalapeno, Red Onion, Red Pepper, Roma Tomato, and cilantro. Season with Kosher Salt and Coarse Black Pepper. Add the Citrus Juices and Olive Oil. Gently mix and taste to see if you need additional salt. Place in fridge for at least 15 minutes.
- 2. Heat up the grill. Season the Swordfish Steaks with a touch of Olive Oil, Kosher Salt and Pepper. Grill the swordfish for about 4 minutes per side depending on thickness. Do NOT overcook your fish.
- 3. To serve plate the Swordfish on top a bed of Rice or like I did with grilled Asparagus. Top with the fresh Mango Salsa.
