CUTTING METHOD
- 1. Firstly you have to cut of the sides of the fillet and put it separate since you can use it, its called off cuts.
- 2. Then place your fillet on a cutting board and use a sharp knife to start your proccess.
- 3.Use the tip of the knife to go between the meat and Tendon and make a small cut to be able to lift the Tendon off the meat.
- 4. Hold the tip of the Tendon and then angle your knife so you can separate the Tendon from your fillet.
- 5. Separate the Tendon from the meat by pulling on the tendon and at the same time pressing down with the knife on the fillet.
- 6. Keep on doing that until the whole Tendon is separated from the Fillet. DIFFRENT MEAT CUTS
- - You can cut your fillet into diffrent cuts. - However make sure when you cut you cut against the grain and not with the grain. - You can cut your Fillet into 200g steaks. - Also use the off cuts do cut into cubes or strips for a stir fry or stew. - You can butterfly your Beef fillet also. - Use the off cuts for strips (Stroghanoff)
