METHOD:
- * MARK THE TOMATOES WITH A CROSS ONTOP OF EACH TOMATO.
- 1. Place tmatoes in boiling water for about 1 - 2 minutes and then after pluge into cold water.
- 2. Peeel the skin from the top of the tomato and discard of the peels.
- 3. Chop Tomatoes in chunky cubes.
- 4. Heat your oil in a heavy based pan and fry your Onions and garlic for about 5 minutes, constently stirring.
- 5. Add Tomatoes to pan and cook for about 2 - 3 Minutes, Allow to cool slightly.
- 6. Add Black Olives, Sugar, Vinegar and Salt & Pepper stir until Combined.

TIPS: THIS SAUCE CAN BE MADE A DAY BEFORE AND STORED IN A SEELED CONTAINER IN THE FRIDGE
IF YOU PREFER YOU CAN PUREE MIXTURE TO A SMOOTH CONSISTANCY.
