Vegan Zucchini Bread

Ingredients
    INGREDIENTS FOR 1 LOAF:
  • 1 1/2 cup Cake Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 1/2 cup Zucchini ((Shredded))
  • 2 tbsp Ground Flax Seeds
  • 3 tbsp Water
  • 3/4 cup Non-Dairy Milk
  • 2/3 cup Brown Sugar
  • 1/4 cup Vegan Butter ((Melted))
  • 2 tsp Vanilla Extract
  • 1 tsp Apple Cider Vinegar
  • 1/2 cup Nuts
Instructions
    METHOD:
  1. 1. Preheat oven to 170 degrees. 9. Bake for 45 to 50 minutes or until a toothpick comes out clean (some crumbs are fine, but raw batter isn't.) 10. Let cool for about 30 minutes before removing from the pan.
  2. 2. Grease a loaf pan (or line with parchment paper.)
  3. 3. Mix together the Flax Seed and Water in a small bowl. Set aside.
  4. 4. In another bowl stir together the wet ingredients: Non-Dairy Milk, Brown Sugar, melted Vegan Butter, Apple Cider Vinegar and Vanilla.
  5. 5. In a large bowl mix together the dry ingredients: Flour, Baking Powder, Baking Soda, Cinnamon, Nutmeg and Shredded Zucchini.
  6. 6. Mix the Flaxseed mixture into the wet ingredients.
  7. 7. Mix the wet ingredients into the dry ingredients.
  8. 8. Stir in optional add-ins.
