METHOD TO COOK PORK:
- 1. Simply add the joint to a slow cooker or sturdy extra-large casserole dish and pour over the coke.
- 2. Cook on a high heat if using a slow cooker or 150 degrees in the oven for at least 5 hours.
- 3. You know the Pork is cooked long enough if you can tear it into shreds with a fork.
- 4. Drain the meat and coke juices into a jug and skim off the fat. METHOD TO MAKE BBQ SAUCE:
- 1. Add the BBQ sauce ingredients to a jug and stir to combine into a paste.
- 2. Once your Pork is cooked and drained add 250ml to 300ml of the meat/coke juice to the BBQ sauce ingredients and mix to combine. METHOD TO MAKE PULLED PORK:
- 1. Shred the meat and remove all fat and unwanted bits.
- 2. Add the shredded meat back into the slow cooker or casserole dish and pour over the BBQ sauce mix to combine.
- 3. If using a slow cooker leave the lid ajar for the last 30 to 40 minutes still on high heat stir occasionally. If returning to the oven keep the lid sealed for 30 minutes.
