METHOD:
- 1. Cut Sausages into small pieces about 2 cm long.
- 2. Heat Oil in large heavy based pan and fry sausages, Cook over medium heat for about 5 minutes or until golden brown.
- 3. Remove from pan and drain on paper towel.
- 4. Add Leeks, Garlic, Carrots and Celery to pan and cook for 2 - 3 minutes or until soft, stir occasionally.
- 5. Add flour and cook for 1 minute stirring constantly, Add Stock Cubes, gradually stir in water and Wine.
- 6. Bring to boil and the reduce heat and let simmer uncovered for 10 minutes.
- 7. Add Pasta, Beans and Chilli to pan and increase the heat cook for about 8 - 10 minutes or until Pasta is tender, Return sausages to pan and use Salt & Pepper for taste.
- 8. Serve with Chopped Parsley.
