    METHOD:
  • 1. Prepare Red & Green Salsa as per Method.( Will find Recipe on site under Sauce Recipes)
  • 2. Remove and discards casings from Chorizo Sausages. Heat medium skillet over high heat until hot, reduce heat to medium and crumble Chorizo into skillet and brown for 6 - 8 minutes. Remove from skillet and drain oil with paper towel.
  • 3. Preheat oven on 230 degrees, Mix Cheese in bowl.
  • 4. Place Tortillas on baking sheet. Divide Chorizo evenly among Tortillas leaving 1/4 inch of edges open. Sprinkle Cheese mixture over the top.
  • 5. Bake 8 - 10 minutes until edges are crisp and golden and cheese is bubbly and melted.
  • 6. Transfer to serving plate and cut each tortilla into 6 wedges. Sprinkle Red & Green Salsa on wedges if desire or serve on the side.
