    METHOD:
  • 1. Combine onion and Lemon Juice in a bowl. Set aside.
  • 2. Heat Oil in a large frying pan over medium heat. Cook Onion stirring for 3 minutes. Add Carrot, Parsnip and Garlic and cook stirring for 4 minutes or until tender. Transfer to a large plate to cool (have a plate in the freezer so it speeds up the cooling).
  • 3. Coarsely mash Beans with a fork and combine with Vegetables, Parsley and Zest. Season. Shape into 4 patties. Dust with Flour. Coat with Sesame Seeds.
  • 4. Heat oil in large non-stick frying pan over medium heat. Cook patties for 3 to 4 minutes each side or until golden.
  • 5. Combine Vegan Mayonnaise and Sriracha (Hot Sauce) in a bowl. Spread half of Chili Mayonnaise over bread bases, Top with Baby Spinach, Patties, Drained Onion. Dollop over remaining Chilli Mayonnaise and Avocado Mash cover with bread tops.
