METHOD:
- 1. Preheat oven to 200 degrees.
- 2. Pulse Cauliflower in a food processor until it resembles fine Breadcrumbs transfer to a large bowl. Drizzle 2 teaspoons Olive oil over the cauliflower and stir to coat spread onto a rimmed baking sheet.
- 3. Roast Cauliflower stirring every 5 minutes until lightly golden for about 15 to 17 minutes. Spoon into a shallow bowl to cool.
- 4. Mix 2 tablespoons Olive Oil and minced Garlic together in a small bowl season with Salt & Pepper. Brush the oil mixture onto Cod Fillets.
- 5. Stir roasted Cauliflower, Jalapeno Peppers, Parmigiano-Reggiano Cheese, Parsley, Garlic, 1 tablespoon Olive Oil and Lemon Zest together in a shallow bowl season with Salt & Pepper.
- 6. Brush Egg over the top of a Cod Fillet. Press the egg-brushed side into the cauliflower mixture until well coated and arrange in a shallow baking dish repeat with remaining fillets.
- 7. Bake in the preheated oven until the fish flakes easily with a fork for about 10 to 15 minutes.
