Lamb Cutlets on a bed of Mash Potatoes

    POTATO METHOD:
  • 1. Place Potatoes and Tomatoes in a large mixing bowl.
  • 2. Add 30ml of Olive Oil and seasoning and toss to coat.
  • 3. Spread half the mixture out evenly in a oven casserole.
  • 4. Arrange the Onions and Garlic ontop of the Potatoes.
  • 5. Spread the rest of the Potato mixture over and cover casserole with Tin Foil.
  • 6. Bake in Pre-Heated oven for about 30 minutes. (200 degrees).
  • CUTLETS METHOD:
  • 1. Season the Lamb Cutlets and place them ontop of the baked Potatoes.
  • 2. Drizzle with Olive Oil and sprinkle the chopped Rosemary over.
  • 3. Return to the oven and bake uncovered until the Cutlets and potatoes are tender (30minutes)

Notes

TIP: ENSURE THAT YOU CUT THE POTATOES IN THIN SLICES OTHERWISE IT WILL NOT BE TENDER FOR THE FIRST BAKING SESSION BEFORE YOU PUT THE LAMB CUTLETS OVER THEM.
