METHOD:
- 1. In a medium bowl combine the Garlic, 1 Tablespoon of Oil, Lime Juice, Worcestershire Sauce and Pepper. Add Pork Strips and toss to coat. let marinate for 10 - 20 minutes stirring the strips at least once.
- 2. Meanwhile, combine all the ingredients for the Salsa in a bowl and mix well. set aside.
- 3. Cut Avocado in half and remove the stone. Scrape the flesh into a bowl and mash in with a fork. Stir in the chopped Coriander.
- 4. Preheat oven to 180 degrees or Gas Stove 4 wrap the Corn tortillas in foil and heat them on the oven for 10 minutes.
- 5. Meanwhile heat the remaining oil in a frying pan.. add the Onion and Green pepper slices and cook until softened for about 5 minutes.
- 6. Add Pork Strips to the frying pan and fry briskly turning occasionally until cooked and browned for about 5 minutes.
- 7. To serve, Place a spoonful of the Avocado on each of the heated Tortillas. Top with some of the Pork mixture and a spoonful of the Salsa. Garnish with an Olive and serve with more Salsa.
