METHOD:
- 1. Cut Springbok into neat lenghts and season well.
- 2. Heat cast iron pan until quite hot. Rapidly grill meat on all sides and plunge into ice water to halt cooking, Rinse well
- 3. In a bowl mix all the marinade ingredients together. Add onions and some lemon zest.
- 4. Marinade meat for 3 - 4 hours.
- 5. Slice meat and serve with individual garden salad.
