    METHOD:
  • 1. Preheat oven to 180 degrees. Cut circles out of bread slices with a 2-inch (5cm) round cutter. Melt 3 Tablespoons of Butter in a small saucepan. Brush both sides of the circles with the melted butter lightly. Bake bread on an ungreased baking sheet for 5 - 6 minutes per side or until golden. remove to wire rack and cool completely.
  • 2. Increase oven heat to 220 degrees, Melt remaining butter in the same sauce pan. Stir in cake flour and cook on a medium heat until bubbly. Whisk Milk in and cook for 1 minute keep on stirring until sauce is thick. (Like doing a quick White Sauce) Place Mushrooms in a bowl and stir in the sauce, 3 Tablespoons of Cheese, Anchovy Paste, salt and Black Pepper until well blended.
  • 3. Spread heaped Teaspoon full Mushroom mixture on top of each toasted roundel, Place on a ungreased baking sheet and sprinkle left over cheese over the Canapes.
  • 4. Bake 5 - 7 minutes until top are lightly brown. Serve warm.
