METHOD:
- 1. Add your Coconut Oil to a heavy based frying pan.
- 2. Add your Vegetables and fry for a few minutes. if your using Frozen Vegetables pop it in the microwave for about 30 seconds on a high.
- 3. Add your 3 Eggs and Assorted Mixed Spice and stir constantly until cooked.
- 4. Serve as is and garnish with Fresh chopped Basil.
