    METHOD:
  • 1. Cream Butter and Sugar until light then add Eggs one at a time beating well between additions.
  • 2 .Sift Flour with Baking Powder, Bicarbonate of Soda, salt and Cinnamon.
  • 3. Add Flour mixture to creamed mixture alternatively with Bananas and beating well until smooth. Stir in extras (optional) and Vanilla extract.
  • 4.Pour into a lined and buttered 8 inch loaf tin. Smooth top and bake at 180 degrees in centre of oven for 50 minutes to 1 hour. Turn out, remove paper and cool.
