Gluten-free Fluffy Pancakes

    METHOD:
  • 1. Whisk your Eggs in a stand mixer or by hand for about 5 to 10 minutes until they are light in colour a thicker consistency and foamy.
  • 2. Then add in the rest of the ingredients and whisk until just combined.
  • 3. Let the batter stand for 5 to 8 minutes. It should be thick and grainy in texture.
  • 4. Place some Coconut Oil in a pan and once warm scoop out some batter in to the pan with a tablespoon.
  • 5. Fry the pancakes on medium heat not too hot otherwise they will burn once both sides are golden brown to medium brown they are ready to be eaten!
  • 6. Enjoy with Coconut Yoghurt, Maple Syrup and fresh Bananas
